Peach Pancakes and Scrambled Eggs with Goat Cheese
I’m by no means anything but a recipe copier. I have friends who can just throw stuff together and I feel like I’m getting a little more experience with that but it’s slow. I LOVE food blogs just like the rest of the world and thought I’d share what I made for brekkie this morning… That I took from my fav new recipes.
To set the scene…
My honey went to the butcher’s this morning because I woke up saying… “Man I sure wish I had some American cut bacon…” Did a bit of reading up on this folks and for your information the English and Canadians use the same kind of cut but the British like a little fat in their slice like us Americans. Only difference is we take the slice from the pork belly and theirs comes from the pork loin. I got this little summary from Endless Simmer, he has pics to demonstrate if you so desire to see for yourself. Might not have been exactly American style bacon, but when I fried it up… it tasted like home and that’s good enough for me.
The pancake mix I got from Something Swanky… and I will store the recipe forever in my mind because they are delicious and fluffy. I just added a peach, cut up into tiny 1/4″ cubes to the mix.
And the scrambled eggs and goat cheese came from Mr Donal Skehan’s blog. I love this guy! I made this one day for me and my honey but thought that with the pancakes…. croissants might be carb overkill.
